Commercial Citrus Press: High-Volume Extraction for Fresh Citrus Juice

A commercial citrus press is designed to extract juice from citrus fruit repeatedly and efficiently while controlling seeds, peel contact, and pulp. It ranges from heavy manual lever presses to powered reamers and automatic machines that cut and squeeze whole fruit.

Choosing the Right Type

Manual lever presses suit lower-volume bar and kitchen work, powered reamers increase speed for halved fruit, and automatic feed machines can support breakfast or beverage operations with substantial demand. Consider fruit size range, litres per hour, cleaning time, footprint, noise, and the number of components that contact juice.

Fruit Preparation

Wash citrus according to the operation’s produce procedure because the exterior can contact cutting or squeezing components. Remove spoiled fruit and follow the machine’s size specification. Manual and reamer systems normally require fruit to be cut before extraction; automatic machines may handle whole fruit only within an approved diameter range.

Yield and Bitterness

Extraction pressure should recover juice without unnecessarily crushing peel oils and bitter components into the product. Fruit variety, temperature, ripeness, size, and press adjustment affect yield. When quality matters, compare litres of usable juice with flavour rather than pursuing maximum pressure alone.

Service Workflow

  1. Inspect and wash fruit.
  2. Prepare clean receiving containers.
  3. Cut or load fruit according to the machine design.
  4. Monitor seeds, peel fragments, and pulp level.
  5. Transfer juice promptly into controlled refrigerated service or storage.
  6. Remove peel waste before it interferes with the next batch.

Cleaning

Citrus juice, pulp, peel oil, and sugar dry onto equipment quickly. Disassemble removable cones, strainers, press cups, knives, guides, and collection parts as instructed. Wash and sanitise food-contact surfaces promptly and clear pulp from small openings and drains.

Food Safety

Fresh citrus juice is perishable. Use clean fruit, hygienic equipment, clean containers, appropriate refrigeration, traceable labels, and the operation’s approved shelf-life procedure. Automatic extraction does not remove the need for food-safety controls.

Safety

Automatic machines may contain cutting and squeezing mechanisms behind guards. Never bypass interlocks or clear fruit while components are moving. Manual presses can also pinch hands if operated carelessly; keep fingers clear of the pressing zone and ensure the unit is stable.

Common Mistakes

  • Using fruit outside the machine’s size range.
  • Applying excessive pressure and extracting harsh peel flavours.
  • Allowing pulp and sugar residue to dry on components.
  • Letting peel waste accumulate around the mechanism.
  • Producing more fresh juice than can be safely handled and served.

Chef’s Note

A citrus press should be judged on flavour as well as yield. The last few grams of juice are not valuable if they bring excessive bitterness from the peel into the batch.
