A cold-press or slow juicer extracts liquid by crushing and pressing produce at lower rotational speeds than a centrifugal juicer. The equipment is valued for controlled extraction and is often chosen for beverage programs where juice quality and yield are prioritised over maximum processing speed.
How It Works
Many slow juicers use an auger to crush produce against a screen, separating juice from pulp. Dedicated hydraulic cold-press systems may first grind produce and then apply pressure to a filled press bag. These are different machine designs, so loading, cleaning, and safety procedures must follow the specific manufacturer.
Choosing the System
Consider expected litres per service, ingredient range, preparation labour, feed size, cleaning time, pulp handling, noise, footprint, and serviceability. A machine that produces excellent juice but takes too long to dismantle between busy service periods may not fit the operation.
Produce Preparation
Wash and inspect all produce according to the food-safety plan. Remove hard pits, spoiled material, and excluded skins or stems. Cut ingredients only to the size required by the machine. Alternate fibrous, soft, and firm ingredients when the manufacturer recommends it to maintain efficient flow.
Yield and Texture
Assess yield by weighing or measuring both input and finished juice when cost control matters. Pulp moisture, screen condition, produce variety, ripeness, and feed rate influence extraction. Fine sediment or separation can still occur in fresh juice; slower extraction does not eliminate the natural behaviour of fruit and vegetable suspensions.
Service and Storage
Freshly extracted juice remains perishable. Produce washing, hygienic equipment, clean bottles or containers, controlled refrigeration, traceable labelling, and a validated shelf-life procedure are essential. Claims about substantially extended life should not replace the operation’s food-safety controls.
Cleaning
Fine screens and press cloths can trap pulp quickly. Disassemble the machine after use, remove residue before it dries, and clean each food-contact component according to manufacturer guidance. Pay particular attention to augers, screens, seals, pulp outlets, press bags, and collection vessels.
Safety
Use the supplied pusher and keep hands away from feed mechanisms. Never dismantle the machine while moving parts are active. Hydraulic press systems involve substantial force; guards, press plates, bags, and pressure controls must be used exactly as designed.
Common Mistakes
- Choosing a machine without considering cleaning labour.
- Forcing produce faster than the auger can process it.
- Allowing pulp to dry into fine screens.
- Assuming “cold pressed” means the juice is microbiologically safe for extended storage.
- Ignoring actual yield when costing expensive produce.

Judge the machine by the whole production cycle: prep time, extraction, usable yield, cleaning, and service quality. Juice yield alone does not tell you whether the equipment is efficient for your kitchen.
