A chocolate tempering machine heats, cools, and maintains chocolate within a controlled process that encourages stable cocoa-butter crystals. Proper temper gives suitable couverture gloss, snap, contraction, and resistance to fat bloom.
What Tempering Controls
Cocoa butter can crystallise in several forms. Tempering aims to establish a stable crystal structure before the chocolate sets. Exact temperatures depend on the chocolate formulation and manufacturer, so use the couverture producer’s working guidance rather than one universal temperature chart.
Machine Types
Small tabletop units heat and stir batch quantities, while continuous tempering machines melt, cool, seed or crystallise, and deliver tempered chocolate continuously for moulding or enrobing. Capacity, recovery, pump system, auger design, and cleaning requirements should match actual production volume.
Starting with the Chocolate
Use clean, dry chocolate and keep water away from the system unless the machine is specifically designed for another product. Chocolate contaminated with moisture can seize. Different couvertures may require different programs because cocoa-butter content, milk fat, and formulation affect behaviour.
Seeding
Some batch machines use tempered solid chocolate as seed to introduce stable crystals during cooling. Continuous systems may create the required crystal structure through their own controlled cooling and movement. Follow the equipment and chocolate manufacturer’s method rather than adding seed automatically to every machine.
Testing Temper
Before a long production run, make a small test on parchment, acetate, a palette knife, or another approved surface. Properly tempered chocolate should begin setting within an appropriate time for the chocolate and room conditions and develop the expected appearance. Temperature display alone does not guarantee crystal condition.
Production Control
Keep moulds, fillings, room temperature, equipment, and chocolate additions within the process specification. Adding large quantities of hot untempered chocolate or cold ingredients can disturb the working condition. Record successful settings for each couverture.
Cleaning
Follow the manufacturer’s cleaning procedure carefully. Some systems are designed to retain compatible chocolate between production periods under controlled conditions, while others require draining and disassembly. Water must be kept away from chocolate-contact areas unless the prescribed cleaning method includes complete washing and drying.
Common Mistakes
- Using one temperature program for every couverture.
- Assuming the display temperature proves the chocolate is in temper.
- Introducing water or wet utensils.
- Adding large uncontrolled quantities of chocolate during production.
- Ignoring room and mould temperatures when diagnosing poor set.
Chef’s Note
The machine controls temperature very well; you still need to verify temper. A quick test before filling dozens of moulds is cheaper than discovering the problem after the whole batch sets badly.
