A chafing dish is a portable hot-holding system commonly used for buffets and catered events, typically warming a food pan indirectly through a heated water pan.

Best Uses

Braised dishes, curries, sauces, rice, breakfast items, selected vegetables, and other foods that hold well with gentle moist heat.

Correct Use

Set up on a stable heat-safe surface, use the correct water level, preheat the unit, load properly hot food, and monitor food temperature throughout service.

Fuel and Heat Safety

Where open-flame chafing fuel is used, follow venue fire-safety procedures, maintain clearance from combustible materials, and handle fuel only as directed by the manufacturer and event safety plan.

Common Mistakes

  • Trying to cook cold food in the chafer.
  • Allowing the water pan to run dry.
  • Keeping lids closed so long that condensation damages crisp foods.
  • Placing chafers where guests or fabric can contact the heat source.
