Oil poaching gently cooks food submerged or partly submerged in oil at a controlled temperature well below deep-frying heat.

Choose an oil suited to the flavour and temperature, heat it gradually, add the food carefully and maintain gentle controlled heat without vigorous frying bubbles.

Why It Works

Unlike deep-frying, the goal is not rapid dehydration and crust formation. The lower temperature transfers heat gently and can preserve a tender texture.

Applications and Control Points

Fish, garlic, tomatoes and some vegetables can be oil-poached. Do not treat oil-poached garlic or vegetables as shelf-stable preserves; cool and refrigerate safely when storing.
