Salsify: Selection, Storage, Preparation, and Culinary Uses

Salsify is a long root vegetable valued for its mild, earthy flavour and tender texture after cooking. The pale flesh can discolour rapidly once peeled.

Selection and Storage

Choose firm, relatively straight roots without soft spots or severe shrivelling. Store cool and dry in the refrigerator and scrub thoroughly before preparation.

Preparation and Culinary Uses

Peel just before cooking and hold the cut flesh in acidulated water if necessary to limit browning. Simmer, braise, roast, gratinate or purée it; cook until tender rather than relying on a fixed time because root diameter varies.
