A vacuum sealer removes air from specialised packaging and heat-seals the bag, supporting sous-vide preparation, organised storage, portioning, and selected preservation workflows.
Main Types
External suction sealers draw air from embossed bags and suit many home applications. Chamber sealers evacuate an entire chamber, making liquids and high-volume production easier to package.
What to Look For
- Seal width and reliability.
- Bag compatibility and ongoing supply cost.
- Vacuum control for delicate foods.
- Chamber size when packaging liquids or large portions.
Correct Use
Keep the seal area clean and dry, leave enough bag material for a complete seal, label packages clearly, and use food-grade bags rated for the intended storage or cooking temperature.
Food Safety
Removing oxygen does not make perishable food shelf-stable. Reduced-oxygen packaging can change microbial risks, so refrigeration, freezing, validated sous-vide processes, shelf-life controls, and local regulations still apply.
Common Mistakes
- Sealing food residue into the seal line.
- Crushing delicate foods with excessive vacuum.
- Treating vacuum packaging as a substitute for refrigeration.
