Tomato Corer: Removing Stem Cores with Minimal Waste

A tomato corer is a small serrated or toothed scoop designed to remove the firm stem core from tomatoes without sacrificing large amounts of flesh.

Selection and Construction

Choose a compact stainless food-contact head with teeth sharp enough to cut cleanly and a handle that gives fingertip control.

Professional Use

Insert around the stem at a shallow angle, rotate to cut a cone around the core and lift it out. Wash promptly because tomato acids and seeds can collect around the teeth.

Cleaning, Safety, and Storage

Clean promptly according to the material and manufacturer’s instructions, paying attention to joints, wires, teeth and other food-contact areas. Dry completely before storage and remove damaged equipment from service.

Chef’s Note

Specialised tools are worthwhile when they improve control, repeatability, yield or safety. They should not replace sound knife skills or safe handling when a simpler tool performs the task equally well.
