A pastry comb is a toothed or patterned scraper used to create repeated decorative lines and textures in buttercream, ganache, chocolate and other soft finishes.
Selection and Construction
Choose tooth size and pattern according to the finish required. Rigid metal or food-safe plastic combs provide cleaner repeated lines than improvised tools.
Professional Use
Apply an even layer of the finishing medium first. Hold the comb at a consistent angle and draw it steadily across or around the surface. Clean the teeth between passes when buildup begins to distort the pattern.
Cleaning, Safety, and Storage
Clean the tool promptly after use according to its material and the manufacturer’s instructions. Dry thoroughly before storage. Inspect cutting edges, joints, handles and food-contact surfaces regularly and remove damaged equipment from service.
