A larding needle is a specialised long tool used to draw narrow strips of fat through lean meat in classical larding.
Selection and Construction
Choose a food-grade tool with a secure handle and a channel or gripping design suited to the fat strips being used. The needle should be straight, smooth and free from corrosion.
Professional Use
Keep fat and meat chilled for control. Load the strip, pass the needle through the meat along the planned path and draw the fat into place without excessive tearing. Wash and sanitise immediately after raw-meat contact.
Cleaning, Safety, and Storage
Clean promptly according to the material and manufacturer’s instructions, paying attention to joints, wires, teeth and other food-contact areas. Dry completely before storage and remove damaged equipment from service.
Chef’s Note
Specialised tools are worthwhile when they improve control, repeatability, yield or safety. They should not replace sound knife skills or safe handling when a simpler tool performs the task equally well.
