A cold-smoke generator produces smoke while adding as little heat as practical to a separate smoking chamber. It is used to expose suitable foods to smoke aroma without intentionally cooking them, which makes process control and food safety especially important.
Cold Smoke Is Not a Cooking Step
Because product temperature remains relatively low, cold smoking does not automatically destroy pathogens. Foods must enter the process under an appropriate validated curing, refrigeration, or other food-safety system. Never use smoke itself as evidence that raw food has become safe to eat.
Generator Types
Maze trays, tubes, external burn chambers, and powered generators smoulder wood dust, pellets, or chips and direct smoke toward the product. Each design has different airflow, fuel, ignition, and fire-control requirements. Use only fuel specified by the manufacturer.
Temperature Monitoring
Monitor both smoking-chamber and product conditions as required by the process. Ambient weather, generator heat, smoke duration, chamber size, and airflow can raise temperature. A process intended to remain cold should have defined temperature limits and corrective actions.
Wood Selection
Use clean, untreated food-grade smoking woods. Species and particle size affect burn rate and flavour. Avoid treated lumber, painted wood, unknown scraps, and resinous woods not intended for culinary smoking.
Airflow
Smoke needs enough airflow to smoulder cleanly and move through the chamber without becoming stagnant and harsh. Excess oxygen can cause the fuel to flame and add heat; insufficient oxygen can extinguish the generator or create poor combustion. Follow the smoker and generator design rather than improvising sealed boxes.
Fire Safety
Even “cold” smoking involves combustion. Operate the generator in an approved location away from combustible materials, maintain required clearances, and keep fire controls available according to the site procedure. Ash and fuel remain a fire risk until fully extinguished and cold.
Cleaning
Remove ash after it is cold and clean tar, grease, and residue from the generator, tubing, racks, and smoking chamber according to manufacturer guidance. Excess deposits can affect flavour, restrict airflow, and contribute to fire risk.
Common Mistakes
- Treating cold smoking as a pathogen-kill step.
- Failing to monitor chamber or product temperature.
- Using unsuitable or unknown wood.
- Restricting airflow until smoke becomes stale and heavy.
- Discarding ash before it is completely extinguished.
