Choose a corrosion-resistant blade with a secure, non-slip handle and a shape intended for clams rather than substituting a long kitchen knife.
Professional Use
Protect the holding hand with an appropriate glove or folded towel, work the blade into the shell seam and keep the cutting path away from the hand. Clean and sanitise after raw shellfish contact.
Cleaning, Safety, and Storage
Clean promptly according to the material and manufacturer’s instructions, paying attention to joints, wires, teeth and other food-contact areas. Dry completely before storage and remove damaged equipment from service.
