A chocolate enrober moves centres, biscuits, cakes, or confectionery pieces through a controlled curtain of tempered chocolate so the top, sides, and often the base receive a consistent coating at production speed.
How the Line Works
Product travels on a mesh belt through a chocolate curtain. A bottoming system may coat the base first, while vibration and air flow remove excess chocolate and control coating thickness. The product then moves into a cooling stage or onto trays for setting, depending on the system.
Chocolate Must Be in Working Condition
An enrober cannot correct poorly tempered chocolate. Maintain the couverture within its required temper and viscosity range, and keep the machine’s reservoir, pump, curtain, and return system at the specified conditions. Test temper before committing a large batch.
Centre Temperature
Centres should enter the line at a temperature appropriate to the chocolate and product. Very cold centres can create condensation; warm centres can disturb temper or delay setting. Standardise product temperature, size, and spacing for repeatable coating.
Curtain and Belt Settings
Adjust curtain flow, belt speed, vibration, air blow-off, and bottoming according to the product. Faster belts reduce exposure time, while excessive chocolate flow can create heavy feet and waste. Record successful settings for recurring products.
Cooling
Chocolate needs controlled setting conditions after enrobing. Cooling tunnels manage air temperature and movement to set the coating without creating condensation or thermal shock. Follow the couverture and equipment guidance for the intended finish.
Product Spacing
Leave enough distance between pieces so chocolate can flow around them and they do not touch before setting. Use guides or disciplined hand placement to keep rows straight, especially when the line feeds packaging or decoration downstream.
Cleaning
Cleaning procedures vary greatly by machine. Follow manufacturer instructions for draining, scraping, belt cleaning, pumps, reservoirs, curtains, and removable parts. Keep water away from chocolate unless the system is being fully washed and completely dried under an approved procedure.
Common Mistakes
- Running chocolate that has not been verified in temper.
- Feeding centres at inconsistent temperatures.
- Overcrowding the belt.
- Using excessive curtain flow and creating thick coating feet.
- Changing several machine settings at once without recording the result.
Chef’s Note
Enrobing becomes efficient when the product entering the machine is already standardised. Same centre weight, same temperature, same spacing—then the machine settings can actually stay consistent.
